As a Diet and Lifestyle Consultant I set out on CNM’s Natural Chef Course so I could extend my therapeutic menu planning for my clients, based on naturopathic principles of health. Gaining practical hands-on experience and recipe writing skills were things I found especially useful and enjoyable. An important part of the training is also doing an internship in a busy commercial kitchen so that you can experience the high level of precision needed to run a successful restaurant or event.
My input on how to make dishes even healthier based on the knowledge I had learnt was warmly welcomed. I never anticipated that it would lead to my taking over and rebranding the café in London’s Soho, but it did. We offer scrumptious and nutritious dishes catering for vegetarian, vegan, raw-food, dairy and gluten-free diets.
Each day is a challenge and huge fun to develop fresh seasonal menus. We’re packed every day, so it’s clear that there is a real call for healthy and delicious food that caters for different preferences and allergies. I’m so glad that I pursued my passion and went for it!
